✨ Description

The Tomahawk steak is not just a piece of meat – it is a ritual. Named for its shape (it resembles the traditional ax of the natives), the Tomahawk impresses with its large bone and its generous 1kg weight.

This particular piece comes from Australian Black Angus cattle, from John Dee Farm, one of the most recognized Angus farms in the world. This breed is famous for:

  • 🧈 Rich buttery texture

  • 🥩 Clean, intense flavor

The Tomahawk has been naturally flavored with fresh rosemary , pink Ceylon pepper , and coarse sea salt , to preserve the authenticity of the meat but also to acquire a botanical character without "covering" it up with anything.

It is the ideal meat for those who don't just eat steak – but honor it!


🍽️ Flavor Profile

  • Texture : Dense but soft, juicy on the inside, with a crispy exterior

  • Taste : Earthy, rich, with a slightly herbal finish

  • Aroma : Pepper and rosemary that blend harmoniously with the burnt fat

  • Visually : An entire "bone-work of art" on the plate


🔥 Baking Method

The product is available ready to bake , already seasoned – no additional marinating required

➤ BBQ (grill or charcoal):

  1. Take the meat out of the refrigerator 1 hour before

  2. Bake over medium heat (180°C) over indirect heat for ~20' per side.

  3. Finish with direct flame (sear) for 2' per side

  4. Internal temperature for medium rare: 52–54°C

➤ Sous-vide + Sear:

  1. Seal in a sous-vide bag

  2. Cook at 54°C for 2.5 hours

  3. Sear 1–2 minutes per side on a hot cast iron or BBQ.

➤ Oven:

  1. Pre-cook in a pan or grill for color

  2. Bake at 160°C for 20–25 minutes

  3. Rest for 10–15 minutes with aluminum foil


❄️ Maintenance Method

  • Fresh (vacuum or skin):
    • Refrigerator: up to 5 days
    • Freezing: up to 6 months

  • After baking:
    • Keeps up to 48 hours in the refrigerator
    • Ideal reheating: sous-vide or low-temperature oven

Never defrost at room temperature – only in the refrigerator
