Inside Skirt Wagyu BMS: 9 from Australia Stone Axe is a highly refined cut of meat from the inside of the animal's diaphragm, known for its excellent flavour and unique texture. The marbling grade of 9+ (BMS 9) indicates a high content of intramuscular fat, giving a rich and smooth flavour.

Stone Axe specializes in 100% full-blood Wagyu, with strict breeding standards that maintain the genetic lines of the Japanese Black Wagyu . The animals are raised on farms in Australia, in areas with a clean climate and conditions that favor the maturation and quality of the meat.

Inside Skirt is a thin, long cut with a strong flavor, ideal for quick grilling, stir-frying or marinating for tacos and sandwiches. This meat is not as tender as other Wagyu cuts, but it is distinguished by its flavor complexity, especially when cooked properly.

Stone Axe 's Wagyu is distinguished by its authenticity and loyalty to Japanese traditions, which has made it one of the most exquisite and award-winning meats in the world.

Baking Method:

  1. Marinating : It is recommended to marinate the meat for at least 30 minutes or up to 8 hours. Use marinades with acidic bases such as lemon, vinegar or even soy sauce to tenderize the meat and enhance the flavor.
  2. Grill : Preheat grill to medium-high heat. Cook for 3-5 minutes per side, until meat has grill marks and reaches desired temperature (e.g., 120°F for medium-rare).
  3. Frying pan : Heat a cast iron frying pan over high heat with a little oil. Cook for 2-4 minutes per side, pressing the meat so that it comes into full contact with the pan.
  4. Resting : Let the meat rest for 5 minutes before cutting it into thin slices, preferably perpendicular to the meat fibers, for better texture.

You can serve the meat with side dishes like grilled vegetables or chimichurri to balance the rich flavor of the Wagyu. It is a luxurious option that promises an exceptional culinary experience.
