Assado , also known as “asado de tira” (thickly cut short ribs), is the ultimate traditional dish of the grill masters of Argentina and Uruguay. In this version, we offer a premium quality piece of Black Angus from Australia , carefully cut crosswise on the bone – for perfect grilling and maximum flavor experience.

Australian Black Angus is famous for:

Assado Black Angus is ideal for slow and steady cooking to bring out its full flavor and aroma. With proper care during cooking, the fat melts into the fibers and “waters” the meat, making it melt in the mouth.

🔥 Baking Method

Ideal for grilling on a BBQ, smoker, grill or oven

BBQ / Grill (charcoal or gas):

  1. Take the meat out of the refrigerator at least 30 minutes before

  2. Bake over medium heat (160–180°C) for 35–40 minutes , turning occasionally.

  3. Optional: smoke with oak or apple wood

  4. Rest it for 10 minutes before cutting it.

Oven (braised / roasted):

  1. Sauté the meat in a pan.

  2. Place it in a pan with beef broth or red wine.

  3. Bake covered at 160°C for 2–2.5 hours.

  4. Uncover and let it brown for another 20 minutes.


❄️ Maintenance Method

  • Fresh (vacuum):
    • Refrigerator (0–4°C): up to 4 days
    • Freezing (−18°C): up to 6 months

  • After baking:
    • Keeps in the refrigerator for up to 2 days
    • Heat in the oven with a little broth or olive oil

Defrost in the refrigerator for 12–18 hours – never at room temperature
