The history of this dish, which is the quintessential Mexican cuisine, dates back to the early 1900s when Lebanese immigrants settled in the city of Puebla, just a few hours south of the Mexican capital. No one can verify the exact date, but around 1930 the first vertical spit appeared in Puebla, which Don Andrés Galena, owner of the taquería “Tacos Arabes Bagdad,” claims was brought by a Greek restaurateur.
